Could be a number of things. Assuming your oil is topped up, it could a faulty switch or, given the age of the car the engine could be worn and is losing oil pressure at higher speeds. Cheapest way to tell is replace the switch and see if that does the trick. As someone who has just got rid of an N reg 2.0 Vectra i know what it feels like for things to go wrong. Best of luck.
Normally when the oil warning light comes on the oil pressure is so low, it is highly likely that the engine will seize (or significant wear occur). Best get it sorted ASAP, for not a lot of money your local garage should be able to check the pressure.

Check things as Parsfan advises I have heard of a partial blockage (close to the oil pressure switch) causing a venturi effect, resulting in a reduced pressure reading (at the pressure switch), but otherwise the system oil pressure was OK.
Having had lots of cars with an oil pressure guage, I can tell you that the higher the engine speed, the higher the oil pressure should be. I`d get that low pressure warning switch checked out.
