Two lawyer friends of mine work in the area of animal law.  One works as an equine lawyer (shes a horsey person and was desperate to combine her love of horses with her career) and the other works for DEFRA in the animal welfare department.  She gets involved in putting together policies for the humane import and export of animals. I imagine organisations like RSPCA and WSPCA have a small team of in house lawyers so it might be worth getting in touch with them direct.

Further to MissZippy's post, if you are interested in working for DEFRA, you might like to have a look at this website:  www.gls.gov.uk.
