Best cruise you've been on

Where to go and who to sail with on a cruise with plenty of interesting stops, good food, good service and not a feeling of clostrophobia (+no bugs on board), is what I'm looking for. I'm particularly interested in a Mid-night sun cruise to the arctic circle next mid-summer from a Scottish port. Are you best to go all inclusive or pay as you drink? answers will be rewarded with a thank-you!

What few people realise is all the cheap deals are inner cabins. To sleep in a cabin with a window (porthole) you pay serious bucks.
As for the all inclusive, it will depend on how much you drink or eat. We went all in because I eat like a horse everyday and drink like a fish. The only extra was champagne. It is therefore good for your budget because on an all in boat, all you will need is a few pounds for nick-nacks and the casino (which is not really my bag)
