reply not possible

I'm sure you've all had this but I'd like to know how it works.
Someone sends you an email, usually spam I'll admit though not always. If you ty to reply to it, you get an undeliverable message notice. With ordinary emails, the email address of the sender is available if you right click the senders name in Outlook you get the option to send mail and their address comes up in the "to" box of a new email. How does someone, namely spammers I suppose, manage to send mail and withhold that information?
Just curious!
