help does anyone have a good recipe for a mince lamb curry

stick of cinnamon
couple of bayleaves
2-3 cardomons
2-3 cloves
1 tablespoon oil
1 star anise
curry ingredients
500g minced lamb
1 large onion - chopped
1 heaped teaspoon minced/grated garlic
1 heaped teaspoon minced/grated ginger
1 teaspoon salt
1 large tin of tomatoes
2 teaspoons chilli powder - or to taste
1 twaspoon tumeric (haldi)
1/2 teaspoon garam masala
1 chopped green chilli
1 potato peeled & chopped - optional
4 ounces frozen baby peas - optional
handful of chopped coriander for garnish
heat oil in a pan, add crackle ingredients & let them heat up - they will release an aroma.
Add the onion & fry until browned.
Add the tin of tomatoes and continue to cook until approximately reduced by a third (about 8-10 mins)
Now add all the other ingredients except for the mince, coriander & garam masala.
Continue cooking for another 5 mins.
Add all of the mince and stir fry on a high heat for around 3-5 mins so that everything is coated in the spicy sauce. place a lid on the pan and let it contue cooking on a medium heat for a further 10 mins. Make sure you give it a stir half way through.
Add about a cup of boiling water - or to the thickness you require the sauce to be, stir, cover & cook for another 10 mins.
Now you can add some peeled chopped potatoes and continue to cook until they're tender.
Add frozen peas if using and cook for 5 mins.
Turn the gas off, sprinkle with coriander and garam masala.
Enjoy!

This is the recipe that I have used for years......I could probably do it with my eyes closed!! Serve it with nan bread and lots of greek yogurt.
