I have made apple chutney with some. delicious. Got recipe from Google.I have also cooked some down and made little portions of apple sauce for freezer.Got given some blackberries and cooked some more down in portions for pies and crumbles and again put them in freezer for winter months.Just a few ideas for you.

If they are cooking apples, you could cut the core out, cut a little line through the skin round the apple (kind of like a belt), fill the core hole with brown sugar, put a dot of butter on top. Put in a roasting tin, with a spoonful of water and shove in the oven until it's soft.
I used to hate baked apples when I was little, can't imagine why now though, they are amazing. Serve with loads of custard.
