Although I eat a lot of fruit and veg (I eat a lot of everything really), I find it really hard to cut down on carbs but find that a toasted wholemeal pitta (approx 150cals) take away that yearning for bread and pasta and all things naughty. You can fill it with anything and bulk it out with salad to make it really filling.
As for evening meals, baked sweet potatoes are so tasty, so good in fact they don't even taste like they could be healthy - just 45mins in a moderately hot oven.
Because I love my carbs so much I still have carby dinners, but I have been using brown rice and pasta instead and having smaller portions but bulking the meals out with veg that I like (no point in eating things you don't like just to pad your meal out).
Stir fry's can be a low (or no) carb as you like, or fish pies or shepherd's pies with small amounts of mash. You can make a mean spag bol and bulk it out with mushrooms and grated carrot, or chilli's with mushrooms and peppers. If we do a curry then I will add a dozen mushrooms and a couple of peppers for example.
