is living tissue more like water or buffer?

Tissue is largely water but with a) a lot of other stuff, like protein thrown in and b) cell walls which compartmentalise the water and stop it from falling about all over the place. In addition there are different sorts of living tissue which makes for a lot of different textures.
If you think about things we eat (before they're cooked!) potato is very different to celery or to an orange. Liver is quite different to steak, while kidney is noticeably different to both of them.
