Heres a 15minute veggie curry served withwith cous cous .
Youll need.
1 tablespoon butter or margarine
1 medium onion, chopped
2 garlic cloves, crushed in garlic press
1 teaspoon curry powder
1 teaspoon grated peeled fresh gingerroot
� teaspoon salt
� teaspoon ground cumin
1/8 teaspoon ground red pepper (optional)
2 cups chicken broth
1 package (16 ounces) peeled baby carrot
1 box (10 ounces) couscous
1 package (10 ounces) frozen peas
Mango chutney, plain yogurt, and cilantro leaves for garnish
Pita bread
4 Garlic cloves minced
4 Teaspoons butter
How to make it folks .....
Mix onion, garlic, curry, ginger, salt, cumin, and ground red pepper and cook for 1 minute in a large pan.
Stir in broth and carrots; cover and cook 5 minutes.
Meanwhile blend garlic and butter together and spread on pita bread.
Stir peas into pan and heat through.
Make up couscous according to instructions.
Ensure it has been fluffed up prior to serving.
Bake pitta bread in oven until starting to turn golden.
To serve garnish with chutney, yogurt, and cilantro
