What a wonderful tip, mrs_overall...I will give that one a go as my chocolate cakes can also be dry.....i guess it would be like carrot cake, where you can rarely spot the carrots. Would never have thought of beetroot.

I was going to suggest beetroot too, but another trick is using a little creme fresh in the mixture as it doesnt set and keeps the indide of your cakes lovely and soft
