Is it true that the sea waves at night are caused by the moon's gravity (however little)? I heard this a long time ago and find the idea really fascinating.

no - The TIDES are caused by the gravitational pull of the moon and the sun forming two 'bulges' on the surface of the sea which move around the earth relative to their positions. Waves are caused mainly by winds out at sea.

As we humans are made mostly of water and our brains are - like - floating around in there, does the gravitational pull of the moon effect us?
