Guiness cake
8oz butter
8oz soft brown sugar
4 eggs (lightly beaten)
5oz plain flour
5oz wholemeal flour
2 tsps mixed spice
1 lb mixed fruit
4oz chopped nuts
8-12 tblsps guiness
Cream together butter and sugar until light & creamy.Gradually beat in eggs, fold in flour & spices
Add fruit & nuts mix well.
Turn into a 7" round /square cake tin
Cook on gas mark 3 for 1 hr then reduce heat to a cool oven and cook for a further 1 1/2 hrs
When the cake is cool turn upside down prick base with skewer and spoon over 4-8 tblsps of guiness
This cake will improve if left for 1 week before eating
