Chilli Sauce - Storage

Fellow eaters of food, a question I have. I recently bought a shed-load of red chillis from the Chinese supermarket and am going to make some chilli sauce containing left-over chillis, white wine vinegar, tomato, etc. My question(s) are: how long will this keep in a sterilised jar? Does it have to be airtight or can it be stored in an oil-pourer type jar, does it have to be kept in the fridge? I thank you all 1000 times each.

fresh ginger.lots
garlic lots
lemon peel,
lemon juice
pinch of 5 spice
sugar..quite a lot!
salt and pepper
cover with good oil
and liquidize!!!!!!!!!!
then just store in a old clean plastic bottle in the fridge..
even though its fresh, the combination of sugar, salt lemon juice and oil, keeps it fresh for months....
and its excellent for adding cooked meat or fish in, for a quick meal

errrr just by eye really!
about 10% ginger,garlic and sugar to chillies, 1 or 2 lemons, and enough oil to make it blend, and then taste it, add the salt and pepper, and taste it until it tastes alright, though does need quite a bit of sugar, helps bring the flavour out, and counteract the slight bitterness, if that makes sense
i like it, i prefer the fresh flavour of the ginger and chilli to the cooked type sauces, though it is a bit tangy!!!!
