Just get a loaf of thick sliced bread, toast on each side and whilst still hot slice through the middle to make two slices. Place these on a baking tray, cut side up, in a low oven to crisp up. I usually do this before I put my goose in the oven, then when the melba toast is cool put it in an airtight tin or box until dinner time.
my husband makes tiny cheese and onion scones (slightly bigger than a cherry tomato) and we freeze them. on christmas day we take them out, split them in half and spread them with cream cheese or hummus and put a small slice of olive, or a bit of smoked salmon, or a bit of onion marmalade or fancy chutney, or a prawn, on top. we have a couple of large plates of these, handed round with the bucks fizz, before we sit down for dinner. only ever did a sit down starter once and it wasn't worth the effort. these little scones are really tasty and go down a treat. you could just put butter on some of them for any fussy eaters. they always make our family go mmmmmmmm....
