Unless you have a special name for practicising law under there's no such thing as a legal name. You can get false names, invalid names ("he tried to enter the country under an invalid name") and so on, but not illegal ones. You could be charged if you sign the wrong name or don't admit to your name in court for instance, but that is counterfeiting and purgery, not using an illegal name. As for Prince Charles' surname it is Mountbatten-Windsor, but it doesn't feature in his titled name.
In 1960, the Queen declared that the surname Mountbatten-Windsor would be applied to all her direct descendants other than those with the style 'Royal Highness' or the title 'Prince/Princess'.
Since Prince Charles is most certainly styled 'Royal Highness' and he most certainly has the title 'Prince', this hyphenated surname does not apply to him. His surname is Windsor.
