I think there's a William and a George in there somewhere and his last name is, I think, Windsor. If/when he acceeds to the throne I believe he wants to be known as George as he reckons to be called Charles III may have menacing repercussions
Prince Charles' full set of Christian names is Charles Philip Arthur George and the family's chosen surname is Windsor, having been until 1917 Saxe-Coburg-Gotha. In common with several past monarchs, he is not compelled to use the first of these when he assumes the throne. He has said he would prefer to be King George VII as a follow-on from his grandfather
Unless you have a special name for practicising law under there's no such thing as a legal name. You can get false names, invalid names ("he tried to enter the country under an invalid name") and so on, but not illegal ones. You could be charged if you sign the wrong name or don't admit to your name in court for instance, but that is counterfeiting and purgery, not using an illegal name. As for Prince Charles' surname it is Mountbatten-Windsor, but it doesn't feature in his titled name.
In 1960, the Queen declared that the surname Mountbatten-Windsor would be applied to all her direct descendants other than those with the style 'Royal Highness' or the title 'Prince/Princess'.

Since Prince Charles is most certainly styled 'Royal Highness' and he most certainly has the title 'Prince', this hyphenated surname does not apply to him. His surname is Windsor.

I still am perplexed....

Do they ALWAYS introduce themselves as Prince so and so. Do they NEVER have to fill out any forms and put a last name.

I just don't understand.
The Grand High Chamberlain of the Goose Quill is responsible for all form-filling, royals wouldn't dream of signing anything less than death warrants and stuff.
