Using the clarke water hardness table, does the scale go up in degrees of hardness eg 5 being soft and 88 being very hard ?

Yes

Less than 5.3 Clark degrees is considered soft water
5.3 to 10.5 is moderately hard
10.5 to 21 is hard
Greater than 21 is very hard
