Does anyone know where I can obtain the recipes for this programme? I have tried BBC food but no luck.

I thought the lime,coconut and rum cheesecake looked gorgeous !

Hi, I've tried in vain to get recipes used before on Masterchef....however....there are copyright issues which prevent most of the recipes from being published.....how annoying is that !! Anyways...luckily for you I'm a chef and have made a similar carribean style dessert before so I've adapted it a bit for you....please let me know if you enjoy it .....

➢ 1-1/2 cups desiccated or flaked coconut
➢ 3 tablespoons ground almonds
➢ 3 tablespoons butter or margarine, melted
➢ 1 envelope unflavoured gelatine
➢ 1/4 cup cold water
➢ 3/4 cup sugar
➢ 16 ounces cream cheese softened
➢ 1/4 cup lime juice
➢ 1 tablespoon grated lime peel
➢ Green food colouring
➢ 1-1/2 cups whipping cream whipped
➢ Additional whipped cream and toasted coconut


➢ Method

➢ In bowl combine coconut and nuts then stir in butter.
➢ Press onto bottom of a greased spring form pan.
➢ Bake at 350 for 15 minutes then cool on a wire rack.
➢ In saucepan sprinkle gelatine over cold water and let stand for 1 minute.
➢ Stir in sugar then cook over low heat until sugar and gelatine are dissolved.
➢ Remove from heat.
➢ In mixing bowl beat cream cheese until smooth then gradually beat in gelatine mixture.
➢ Add lime juice and peel and beat until blended.
➢ Tint pale green with food colouring then fold in whipped cream and pour over crust.
➢ Refrigerate for overnight if possible
➢ Carefully run knife around edge of pan to loosen then remove sides of pan.
➢ Garnish with whipped cream and coconut before serving.

If I wanted to add some rum, would you use dark rum or bacadi? and at what stage should I add it.

Hi lidlicker !! you're welcome !! defo dark rum, and only a little bit perhaps 1 tbsp, add in with the sugar and gelatine. all the best
