For each EIDE connection, you can attach 2 drives (either CD / DVD drives or Hard Drives), and on each SATA connection, you can attach one drive (usually Hard Drives, although CD / DVD drives are slowly becoming available).
On the assumption (dangerous, I know) that you have a "standard" system, you will probably have 2 EIDE connections - which will allow 4 drives in total (remember to count how many CD / DVD drives you have on board already) - however, you can get expansion PCI boards which allow you to attach more drives to a single system (and from experience, the performance hit isn't as bad as you may think)
