Does anyone know a recipe for this scrummy biscuity type of cake? It is chocolate and maybe coconut and topped with a soft chocolate icing - a bit like chocolate refrigerator cake. It's a cake from the afternoon office trolley, sort of WI market, cake-stall-at-a-jumble-sale type thing!!!

My mother makes these gorgeous things! I'll be away for a few days,but will post the recipe on thursday when i get back,if you can wait!

Recipe as promised!Amounts are in old weights,so you'll have to check the conversion table.

  4oz marg.

  2oz caster sugar

 4oz self raising flour

 3oz coconut

 4 level dessert spoons cocoa

 4oz icing sugar

Sift flour and half cocoa into bowl.Rub in marg.and add coconut and sugar.Knead until firm.Spread into a greased swiss roll tin and bake at 350 degrees for roughly 30-35mins.Before removing from tin,spread with chocolate icing ,made from the icing sugar sieved with the rest of the cocoa,and blended with boiling water.Cut into squares,and leave to cool.Enjoy!

lindapinda, thankyou thankyou thankyou for my recipe. It sounds just like it should be and I can almost taste it! I'm off to Tesco's now to get my coconut and icing sugar. With any luck it will be ready to scoff by lunchtime. You didn't ever work at BT did you, 'cos that's where I became addicted when it was on the afternoon trolley!!!  yum yum!!
