Getting my car serviced at the Ford dealers is twice as expensive as at my local garage.
Will it affect the value of my car when I part ex it if I use the local garage? I change my car every 3 years.

I don't know but it may affect your warranty...
It WON'T affect the warranty as long as it is serviced according to the manufacturer's specification and using geniuine ford parts.

It may have a negligable effect on the value i.e. if I was looking for a ford I'd pay a bit more for one with full dealer history over one that had 3rd party servicing; but not a lot more as long as it's still been serviced properly.

You will not loose any value on resale.

It is law that any car can be serviced at any garage that is vat registered without effecting your dealer warranty

They must use genuine Ford parts, stick to the Ford servicing schedule and stamp your service records.
Yiu do not have to use Ford parts as long as they are of equal quality.
