Does anyone know if it would be legal for me to park on a "private road" in Scotland (unadopted by the Council).

A road is anything over which the public have a right of passage. It is unlikely that there will be any Traffic Order on a private road. On a public road, maintained by a roads authority, parking restrictions are set down by Traffic Regulation Orders which are made under the The Road Traffic Regulations Act 1984.
However the owner of the private road may object to the parking.
