I have a recipe which I love as it contains cinnamon and raisins, but you can leave those out if you wish.
7 oz self raising flour white (or wholewheat if you wish) or plain flour but with 2 tsp baking powder added.
3 tsp mixed spices (cinnamon, nutmeg etc)
1tsp baking soda (bicarb of soda) I believe I left this out of the recipe sometimes and it made no major difference
4 oz soft brown sugar
2 oz walnuts, I leave this out as I am not keen on walnuts!
4 oz butter or margarine
4oz raisin or sultanas
6oz grated carrots, about 2 medium carrots
grated rind of an orange or 2 tsp of orange juice
2 beaten eggs
Mix the first six ingredients. Gradually melt the butter or marg and add the sultanas, carrots and orange to this. Combine with the dry ingredients, add the beaten egg and mix thoroughly.
Turn into a cake or loaf tin and bake for 45 to 55 minutes in a preheated oven 300F/150C until a knife inserted into the centre comes out clean.
This makes a very moist cake and I love the addition of the raisins and the mixed spices. There is no topping recipe to add on it, as the website that I got it from, believes it will stand up on it's own without the need for the frosted topping, however I have taken the topping from another receipe, using cream cheese and icing sugar etc, and it is completely decilious with the topping as well.
If you decide to try it, I hope you find it as good as I do!
