I would say a VW Golf - Mk1 or 2. I bought my 1984 Mk2 in 1987 and it has now done 238,000+ on the original engine. The car has completed so many touring holidays and in 2006 my wife and I drove down to Gibraltar and then toured the Costa del Sol before driving back through France. I only needed to change the points in Lyon and top up the oil. Last year we toured north France and spent a few days driving around Paris.
I can keep the car fully serviced and maintained at "no expense spared" as all parts are so basic, cheap and available. I just keep a small tool box in the rear footwell and that contains all the tools I might need while we are away, although - touchwood - we haven't been let down yet.
Unfortunately, the original red paint has oxidised to bright orange and gone totally flat over the years. I really wouldn't get more than 250-300 if I ever tried to sell the car, despite it being mechanically superb. I would never sell it of course but if you look for a similar car that's been cared for in the same way it'll sail down to Spain with no trouble. You can always fit any new parts you need before you go and you'll only need to take a few basic tools. You can get any new or second-hand Golf parts anywhere along the route.
Have fun - I know you will as I've done the trip myself.
