I don't know how Memphis style barbecue will appeal the average Brit's palate, but one doesn't go to Memphis and not do the barbecue.. We live in the U.S. and have been to Memphis numerous times. Although
Corky's has been named the top restaurant for nealry 15 years, I, personally prefer
The Central or Cozy Corner... Fact is, it's probably hard to find
bad barbeque in Memphis. The Mempis
style is usually what's called
wet... the flavor is dependant on the sauce, whereas, Carolina style is dependant more on the dry rub and smoke... henceit's called
dry... Too bad you won't have more time, you could do the
Stax Museum...(
