Can I buy a section of tree trunk and use it as a chopping board or does the grain have to be a certain direction / certain type of wood?

Thanks for that, that's the next stage though; I need to source my wood first, no pun intended!
You need the grain to run sideways, across the board. It needs to be cut from a plank. If the grain direction runs the other way, between to top and bottom of the board, you risk splitting it if you were to chop heavily with a cleaver or similar, in the same way you can easily split logs down the grain with an axe.
Bit of a risk of splinters in the food?
