Hi, any good sites for bread making by hand, I have got a bread maker but I cannot get on with it, cheers

I couldn't get on with my breadmaker so now I just use it to mix the dough and then take it out and do the rest by hand ie let it rise somewhere warm then knock it back and shape it into the loaves or rolls you want . Let it rise again and bake as normal. The bread tastes much nicer but you don't get messy doing it!
I am into breadmaking every Sunday and, although I have tried most methods, I keep going back to buying packets of Wrights ready prepared flour which only needs to be mixed with warm water.(Yeast is in the mix,).....My favourite mix is the firm's Ciabatta to which I sometimes add other ingredients such as, Sesame seed, Sunflower seed, Cheese etc and ,although the packet is for two standard Ciabatta loaves, I cook the contents as a single standard loaf in a tin; not as intended on an open tray....It is really good: well I like it and Viv hasn't complained..........Ron

allrecipes.co.uk have lots of lovely bread recipes. i've made the roti from there, though that's not quite the bread you're after i suspect!
I was given a breadmaker for Christmas. I thought it would end up gathering dust at the back of a cupboard but I find I use it three or four times a week! I found the internet recipes a little confusing so I sat in Borders for an hour, going through all the recipes books they had. I ended up buying 'Fresh Bread in the Morning' and 'Bread Machine Easy'. The main recipe I use from 'Fresh Bread' is the first one for white bread - just flour, water, salt and yeast; The 'Easy' book has a fabulous one for Coconut and Cranberry (leave out the coconut). Both were well worth the money just for those two recipes. I think the secret of the bread maker is to FOLLOW the instructions/measurements implicitly. Until you get the hang of what goes in first etc., mistakes get made and the bread doesn't turn out as it should. Find a book that has recipes that you know you want to try; read all the instructions and troubleshooting chapters BEFORE you start to make a loaf; the first couple of times it seems time consuming but once you get to know your machine, it takes ten minutes max to get everything together then the machine does the rest. I haven't bought a shop loaf since Christmas. Good luck!
