I have cream carpets and have all sorts spilt on them from coke to spaghetti bolognese!!! they have all come out with Vanish PowerShot - its wonderful.
Its an aerosol and as you spray it seems to blast the stain right out. you have to rub a bit with a white cloth...but good stuff.
Another way is to wash the area and then put some towels over it. Put lot's of heavy books or catalogues on the towels and let them soak up the stain. Repeat if you need to.
Rub light carpet stains with a mixture of 2 tablespoons of salt dissolved in 100ml White vinegar. Let is dry, then vacuum.
For larger darker stains, add 2 tablespoons of borax to the mixture and use in the same way.

What you should use to remove a stain depends on what has caused it, and what type of carpet you have. Products which are suitable for man made fibres may not be suitable for wool.
Vanish and similar products can work on some man made fibres, but be careful, they attract dirt quickly and can also bleach.
