When its thawed, butterfly it - cut it half way through sideways - then grill it lightly for about five minutes a side or until cooked. You can grill the peppers at the same time and save energy by boiling the potatoes and sweetcorn together.
thanks but i've done this one to death, i'm running out of ways to cook chicken, i've done grilled chicken marinated in loads of different marinades, fajitas, kebabs, soup
my problem is the OH he's got liver problems so everything has to be low fat but he's really fussy about veg (won't eat tomato's etcwhich is a ****** otherwise it would be easy lol)
How about mixing together some butter, garlic, herbs, pancetta or bacon and add a bit of lemon juice. Then stuff the chicken breast and wrap pancetta around it?
i love that rinkins and for me no problem but he can't have butter, bacon etc etc, i am seriously fed up now. i think its going to end up being marinaded chicken again with jacket spud and veggies - mind you i could make that for him and do something different for me
