finger buffett (coeliacs)

I am having a finger buffet in a few weeks, but one guest is a coeliac. Can anyone recommend anything I can prepare for her. We are having the usual sausage rolls, sandwiches, vol eu vents, quiches.

dips with fresh veg to dip in
a nice rice salad with chunks of veg and chicken
grilled mini skewers of lamb, alternated with chunks of peppers and mushroom
a nice poached cold salmon maybe wih some new potatoes

Chicken drumsticks
Gluten free sausages on sticks or skinned and rolled into little meat balls then cooked. We use Black Farmer from Morrisons (and sometimes Tesco)which are very nice.
Use small baked potatoes scooped out and load the skins as if they were vol au vents.
Quinoa makes a nice light salad - use it as if it were rice or cous cous.
Some gluten free bread is vile plain but not to bad toasted - you could put spreads on bits of toast - perhaps rubbed with garlic and loaded at the last minute with.
Ice cold Vichysoisse in small plastic/paper cups is nice with an ice cube and bit of chopped chive on the top.

The Truefree range of foods are very good, particularly the Herb and Onion Crackers. You could use these instead of bread and top them with whatever you are putting in the sandwiches. This range is sold in Tesco and Asda. Asda has its own range of gluten free food called Free From and the Cranberry and Orange Loaf is really good and suggest you top a few slices with fruit such as strawberries for your guests dessert.
You could make Vietnamese Spring rolls, using rice paper wrappers, shrimps, cucumber, spring onions, peppers, shredded chicken/beef. Don't use Soy sauce as a dipping sauce as some contain wheat.
You could make up some polenta, flatten it out onto a plate, cut it into discs and fry them. Top them with mozarella, pesto and cherry tomatoes.
