if i have spare uncooked fruit cake mix, can i freeze it so i can use it at a later date? and if so how long can it be stored in a freezer?

If you're referring to a batter, the answer is no, you cannot freeze it. The cake will fail to rise in the oven once the batter has thawed.

If it is a dry mix, it should keep fine in a regular pantry until you're ready to use it. Seal it in a good storage bag and push out all the air. If there is fresh fruit in it, freezing should work as long as the dry ingredients are still dry.
