I have had a Wedding cake in my freezer for 2 1/2 years. Would it be safe to defrost and put new icing on and use for christening?

If you can use a cake that has been at room temperature for years you should have no problem with one that has been frozen. unless it is full of Icicles of course, or has freezer burn. I have had cake in the freezer for over a year and it was perfect, even the icing.
