Garden Party Buffet food suggest
9 Answers
I have to take a plate of something to go on the buffet table at a garden party tomorrow. I need to think of something that (hopefully) no one else will have taken. I wanted to take a whole cooked salmon but they only seem to be available at xmas or to order which i dont hve time for now. Does anyone have any suggestions as to what i can take that will go down well together with the recipe if i need to make it. many thanks,

Cook the cases as usual.
Mix together cooked flaked salmon, mayonaise and horse radish sause (you don't need alot as the radish is quite strong). Season to taste then spoon into cases.
Although vol-au-vents are often at buffets, this mixture is slightly more posher than the normal tuna or egg.
Horse radish usually goes with beef but I personaly like it with fish.

SEAFOOD AND RICE SALAD
250g white rice
2 salmon fillets
1 pack jumbo prawns
1 Gallia melon, cut into bite-size chunks
cherry tomatoes or larger ones, quartered
half a cucumber, cut into quarters
shredded lettuce (Use a bag of ready-washed mixed salad (but not herb salad - that kills the dish)
SAUCE
half teaspoon chopped chilli (use the stuff in a jar - it mixes in better)
1 tablespoon clear honey
1 tablespoon olive oil
1 tablespoon lemon juice
Cook the salmon and leave to cool. Boil the rice and empty it into a BIG bowl (the one you are going to serve it in). While it's still warm season with sea salt and black pepper and add all the sauce ingredients. Give it a good mix and allow it to cool completely. Cut the lettuce into small pieces and mix in. Add the cucumber and melon and mix in. Break the salmon into bit-size chunks and pile on top with the prawns and tomatoes.
