Does anyone know why i cant make gypsy tart?

Hi All,

Gypsy tart is my absolute favourite thing but the lack of local bakeries now means Im having to resort to attempting to make it myself...well easier said then done... i have followed the recipes found on the web exactly and it still seperates so i end up with a liquidy syrup at the bottom and i foam at the top, does anyone know what Im doing wrong...give my taste buds a real treat and help me out,,,PLEASE!
