This Staccato style of interrupted vocal harmony interspersed with solid guitar riffs does not have a particular name it is just part of the whole generic style associated with Blues in general. A lot of the songs were developed by negro slaves in the late 1800's and were known as "Field Hollers". This might explain the gaps in the music so that a friend or colleague was given the chance to reply with a holler of their own.
