potatoes

I am NOT by any stretch of imagination a gardener but did buy a compost bin for the bit of garden we have. Recently there has been a great upsprouting around the bin (which stands on bare soil) - we have identified the leaves as potatoes - presumably from some which were in early refuse. Could/should we eat them (free food is always welcome) and if so when would you lift them?

and the greenery is dying back.

I doubt you will be lucky enough to get any larger than a `alley` ( a little glass ball) for the uninitiated.
