muffins
I have just got one of those 'bendy' muffin "tins" has anyone got any easy muffin recipes? Thanks.

� cup Milk
� cup Honey
1 Egg
2 � cup Buttermilk baking mix
Combine milk, honey and egg; mix well. Add baking mix and stir only until moistened. Portion into greased muffin tins. Bake at 400 degrees F 18 to 20 minutes or until wooden pick inserted near center comes out clean.
Variation: Cinnamon Apple Muffins: Add 2 cups pared, chopped apples and 1 teaspoon ground cinnamon to basic recipe. Bake about 5 minutes longer than basic recipe.
Easy banana muffins
� cup Butter; softened (1 stick)
1 cup Sugar
2 Eggs
3 Ripe bananas; mashed
1 � cup All-purpose flour
� teaspoon Baking soda
Preheat the oven to 350 degrees F. Coat a 12-cup muffin tin with nonstick cooking spray. In a large bowl, beat the butter and sugar until creamy. Add the eggs and beat until light and fluffy. Stir in the bananas; mix well. Add the flour and baking soda, stirring just enough to moisten. Spoon the batter into the muffin cups and bake for 25 to 30 minutes, or until a wooden toothpick inserted in the center comes out clean.
Optional: Sprinkle the tops with rolled oats before baking, or toss some chocolate chips and/or chopped nuts into the batter.

� pounds Bacon
2 cup Flour
� cup Sugar
1 tablespoon Baking powder
Vegetable oil
1 Egg; beaten
� cup Milk
1 � cup Shredded Cheddar cheese (up to)
� cup Green chile; diced
In a skillet, cook bacon until crispy; drain, reserve the drippings. Crumble the bacon; set aside. In a medium bowl, stir together the flour, sugar and baking powder. Make a well in the center. Measure the drippings, add vegetable oil, if necessary to measure 1/3 cup. Combine the drippings with the egg and milk. Add to the flour mixture and stir until moist. Batter will be lumpy. Carefully fold in the bacon, cheese and green chile. Use amount of green chile to your taste. Grease muffin tins and fill about 3/4 full. Bake in a 400F deg oven for 15-20 minutes, or until golden brown.

4 tablespoon Butter
1 � cup Flour
2 teaspoon Baking Powder
2 tablespoon Sugar
� teaspoon Salt
1 teaspoon Paprika
2 Eggs
� cup Milk
1 teaspoon Dried Thyme
2 ounce Sharp Cheddar Cheese,
Cut in 1/2" dice
1. Preheat oven to 375 F. Thickly grease 9 muffin cups or use paper liners. 2. Melt the butter and set aside. 3. In a mixing bowl, sift together the flour, baking powder, sugar, salt, and paprika. 4. In another bowl, combine the eggs, milk, melted butter, and thyme; whisk to blend. 5. Add the milk mixture to the dry ingredients and stir until just moistened; do not mix until smooth. Mixture should be lumpy. 6. Place a heaped spoonful of batter into prepared cups. Drop a few pieces of cheese over each, then top with another spoonful of batter. For even baking, half-fill any empty muffin cups with water. 7. Bake until puffed and golden, about 25 mins. Let stand 5 mins before unmolding onto a rack. Serve warm or at room temperature.

I struggled for ages to find a great recipe, now I just do a standard fairy cake mixture (equal weight of eggs, SR flour, sugar, margarine / butter) then add cocoa powder and chocolate chips (as much as looks right). I also add the zest / peel of an orange and some of the juice of the orance. No science to it but they turn out great!!! Cook for about 25 mins, 180 in a fan oven!
White Choc and raspberry muffins
makes about 12
2 eggs
125ml vegetable oil
250 ml milk
1 tsp vanilla extract
200g sugar
400g plain flour
3 tsp baking powder (if you havent got plain flour and baking powder use self raising flour)
1 tsp salt
150 white chocolate broken into small pieces
150 g fresh raspberries
preheat oven to 200c gas mark 6 400f
Place eggs, milk, oil, vanilla extract and sugar in a bowl and beat together
In another bowl put flour, baking powder and salt and mix thoroughly then add chocolate
Add the liquid mixture to the dry mixture and roughly mix it doest have to be smooth Add the raspberries last and mix very very carefully not to breah up the fruit (you can never avoid some getting broken up in the dough)
Fill a muffin tray with paper cases and fill each case approximately two thirds with muffin mixture
Bake for 20 - 25 minutes
they are cooked when u skewer inserted into one and then removed comes out clean apart from choc or raspberry juice :-)
