This IS an interesting question,if easy to answer.
The Hyena is undoubtedly far more dangerous than a Pit Bull, given that it is a completely wild animal. I think the documentary you saw must have been "faked" for effect,because nobody could keep a hyena as a pet,not even from a cub;they would be far too unpredictable!
A hyena is bold,strong(one of the strongest bites in the animal kingdom) brave (it will scare a pride of lions off of their kill) and cunning (they work in packs).
IF the documentary WAS real, then there will not be ma,y persons left in that town soon!
Every animal is not only a product of its genetics but also of its upbringing, nature and nurture. Of course you could never trust it 100% but its possible with someone who has lots of animal knowledge and experience to raise one.
After all there are people who keep all sorts of wild animals as pets, bears, wolves, lions, cougars etc!
In terms of bite force the Pit Bull is a bit of a wuss really. These figures are apparently from National Geographic Channel series Animal Bite Force:
Pitbull pressure bite was 238 lbs
German Shepherd bite was 240 lbs
Wild Dogs bite force was 317 lbs
Rottweiler bite force was 328 lbs
Lion bite force was very close to 700 lbs
Hyena's bite force was 1000 lbs
Snaping Turtle bite force was 1004 lbs
Nile Crocodile bite force was 2500 lbs
A human can bite to a maximum force of about 170 lbs and it is estimated that the T-Rex could have had a bite force of around 3300 lbs !
