I had to buy a bunch of celery for a recipe but only needed one stalk. What can I do with the rest? I hate it raw.

Steamed it goes well with fish especially mackerel.
Add a little cream and black pepper once cooked - delish!
I always fry celery with onions and carrots when starting any stock, soup, casserole or sauce - such as bolognese or ragu.
I think it's one of the most versatile of veggies.

I agree with Crisgal, celery is wonderful as a vegetable accompaniment, especially to fish.
Try slicing it into 1/4" pieces, sauteeing in a little butter, then adding a little vegetable or chicken stock. It produces a lovely savoury, yet fresh flavour that goes well with pork.
Also, it marries particularly well with spices. Try sauteeing until transluscent, along with a few cumin seeds, or carraway, or fennel seeds. It's particularly nice done this way with peeled, deseeded and sliced cucumber too - just sweat the cucumber and celery together in a little olive oil with cumin seeds, fennel seeds, and finished with a little chopped dill. It's excellent with white fish.

ooh, donquixote, you've got me drooling for the second time today!
I've never thought of fennel seeds with celery! I always cook my pork chops with them as they go together so well and i can see how they would go with celery as their sort of the same family aren't they?
I think we'll have to have celery with fennel seeds alongside the belly pork!
