More than likely tumbled chicken...where after they have removed the breast, thighs etc the carcass get put in a big machine that sucks the left over meat and senew off....
A lovely value sandwhich I wouldn't touch with a barge pole. Same method that turkey twizlers are made. They also use bleach to make what is 'apparently' meat look white.

I didn't mention vacumm. What they do with the chicken carcasses is to put it a machine that tumbles it and the force pulls any meat and sinew away...then they reform it. I think it's called something to do with mechanicle chicken....But it's still tumbled. I've red the book 'Not on the label' and she went further than investgating nuggets.
