My neigbour has given me a bag of raw beetroots

Has anyone got a tried and tested recipe for beetroot??

I would like it to go with a fish dish.

This Swedish-type salad with smoked trout fillets or kipper fillets is very tasty.

Cook the beetroot - big ones take about 20 minutes in a little water in the microwave.
Boil some potatoes & cut into chunks. Dice the beetroot
Cut the smoked fish fillets into chunks.
Put everything in a bowl & mix together with some good mayonnaise. If you've got any dill herb, a little of that sprinkled in adds a nice finishing touch. Serve warm with a green salad.

slice it up and pickle it in a big air tight jar with sliced chopped raw onion - hmmmmm blummin luvvvvly it is!

You can boil them , let them cool and freeze them , and they
taste like fresh ones when they are defrosted .
