whats the best way to cook pointed red peppers i bought them while shoping but not to sure what to do with them.i know i could roast them in olive oil but any other ideas???
My friend halves red pepers lengthwise, leaves the stem on but de seeds them then bakes them with a little cheese, (garlic boursin, mozzarella, thin sliced emmenthal) and one or two anchovy fillets. Somtimes she drizzles with olive oil, sometimes not. This makes a to die for starter to a winter dinner or a yummy light lunch served with crusty bread
I love to use this type of pepper in soups. Roasted red pepper and cherry tom soup with basil is delicious. Or you could make a red pepper tapenade to go with crusty bread. Google for recipes.
