i baked some mini xmas cakes a few years back in empty baked bean cans - grease them ,line with greaseproof paper and wrap the outside with a half inch layer of newspaper tied with string , this stops them from burning, leave to cool in the can and if they don't turn out just open the bottom with a can opener and push them through, i can't remember the cooking time ,just push a skewer in and if it comes out clean they are done , and of course this makes round ones not square ,also if you feed a rich fruit cake when it is cooked then it is never dry ,just turn it over and prick the bottom with a skewer ond pour rum or brandy over a teaspoon at a time and let the cake soak it up
