Well if you must....
How about:
* 500g/1lb 2oz yellow turnips (swede), trimmed and peeled
* 2 tbsp butter
* 1 tsp freshly grated, peeled ginger or pinch ground ginger
* salt and freshly ground white pepper
* handful of fresh chives, chopped, to serve
1. Place the swede into a large saucepan and cover with water
2. Bring to the boil and cook until tender
3. Drain the swede and put back in the pan
4. Put over a very low heat for a few minutes, stirring, to remove any water left
5. Add the butter and ginger to the pan and stir well
6. Cook gently for a few minutes, then mash with a potato masher until smooth
7. Season, to taste, with salt and freshly ground white pepper
8. To serve, place onto serving dish and sprinkle with the chives
You can also mash with sage and butter cook in the usual way then:
Melt an amount of butter and, once it has begun to froth, throw in the sage leaves and allow to crisp in the fat until they have darkened slightly and are giving off every last vestige of their scent. Spoon over the mashed swede and serve up promptly.
