deep fat fryers

can anyone recomend a deep fat fryer that cooks at a greater heat than usual, one that will cook fish in batter, brown but not over done, I find that mine is either brown and dry or pale but cooked just enough, I never seem to get it just right, I am sure it needs more heat so its not in so long, after all the chip shop can do it in a few minutes, any suggestions welcome.
