Does anyone know why the spelling Pantomine is used so often and why ? I would have thought that

People often don't pronounce the end of the word clearly - they say pantomi... but unless the next word begins with a vowel you can't always hear what the last sound in the word is. So some people hear this as pantomine, and that's how they write it down. They don't necessarily connect it with 'mime', because panto as we know it doesn't involve silent miming.
