I want to do all my printing in Fast mode as it uses less of my ink cartridge. How do I set it as default ?

Can you try and help us all by providing more information in future questions. what version of windows and what printer would help here.

as a general rule goto the control panel, open printers (or printers and faxes if XP) right click on the printer and select properties and then look for a button that says printing defaults, click that and then have a look for the correct setting in there.
