how does this work then?

I am cooking a turkey breast joint for tea. On the back if the packet it gives the calories, fat, salt per 100g "unccooked" and per 100 g when "cooked as recommended". In every case the amounts are more after cooking!
all you have to do is put it in the oven, so how does something increase in salt calories and fat just by applying heat to it???

i could understand that happening with the salt but not fat. fat is a solid, how does it expand with evaporation?

no water would evaporate, lowering the percentage of water, which increases the percentage of the other stuff.
