how long to roast a fillet of beef
7 Answers
I've got a gorgeous fillet of beef to roast. Nice cut which i've marinaded in wine, soy sauce and honey....
now of course i don't want this to be ruined during the roasting process...
it's around 850g. I want it o be be medium-rare. If i roast it at 200C in the centre of the oven how long should i leave it in for?
Should it be covered in the roasting dish or left open?
thanks all..........X

pre heat your oven around gas mark 6 along with a roasting pan. season your fillet first with salt and peper, heat a little olive oil in a frying pan and seal the fillet for around 2 mins then transfer to the oven do not cover with foil as this can stick to the fillet and burn. you need to cook it for around 15 mins for med rare, once cooked remove from the oven and rap it in foil and leave to rest for 20 mins
