help me with my parsnip soup!

i sweated onions and celery in olive oil, added chopped parsnips and topped it up with veg oxo and coconut milk made from coconut block. its currently simmering away with a lid on but its all scummy and the coconut milk looks to have curdled. will it be ok when i blitz it with a blender d'ya think? or should i ditch it? the coconut block when i opened the box, seemed to have separated into a softer, very white bit, and a much harder, beige coloured bit. do you think the coconut block was spoiled? smelt ok.

Taste coconut milk from container to test. Sounds like it should be ok - blitz if necessary. Your ingredients are quite rich for a soup?

the ingredients were actually even richer than stated above, i forgot i put cayenne pepper and ginger in too. once i blended it, it was fine and very delicious dressed with a swirl of sesame oil. rich? ...probably..., but just the way i like it!
I made cream of parsnip soup today, put real single cream in it, it was delicious.
Recipe for soup ...

1. Go to Waitrose.

2. Buy soup.

This recipe seems to work really well.
