Recipe for sweetcorn pancake anyone ??

I was taken to Ottolenghis for a special breakfast treat and I had sweetcorn pancake topped with an avocado and cherry tomato salad n sour cream with crispy bacon -I know it sounds an odd mix but it was absolutely fab - does anyoneknow how to make the pancakes - they were quite thick - a bit like scotch pancakes but much lighter and sort of crumbly - x

they sound like they might have been a ricotta or cottage cheese pancake? A good trick to make any american style pancake lighter as well as using sr flour is to make the batter with the egg yolks only then whisk the whites to the soft peak stage. stir in a spoonful into the batter then fold in the rest and cook immediately

they use plain flour and add baking powder...don't use SR flour and add baking powder as well lol.
